Cooking has been a passion of mine since childhood. When I left Chile in 1991 after college, I found myself longing for the flavors of home, but the Latin community in Minnesota was small, and the Chilean community even smaller. To satisfy my cravings, I began incorporating Chilean flavors into my meals, striving to recreate the tastes I missed dearly.

Following in my mother's footsteps and with the unwavering support of my family, I embarked on a journey to achieve financial independence while pursuing my passion. In 2013, I took a leap of faith into the food truck industry, launching EMCONADA FOOD TRUCK, specializing in serving empanadas in a cone. This venture marked the beginning of our exploration into Latin Fusion Flavors.

Now, twelve years later, we're excited to introduce our new FOOD VAN, bringing our Fusion Latin Flavors to the Twin Cities community. Committed to sustainability, our operation runs entirely on clean energy, powered by batteries. As we look ahead, we're eager to overcome challenges and expand our business for many more years to come.
